生まれ故郷はブリュッセル。イタリアの家系を持つシェフは、かの有名なエコール・ホテリエ・ド・ナムーにて修行、
その後国際的な賞賛を得、2004年12月、ザゼンに加わりました。

彼のスタイルは簡単にいうと「オーガニック＆オルガズミック（＝興奮）」で、手に入るベストクオリティーの食材を
使った洋の東西が混ざり合うキュイジーヌで、ハーブの知識をふんだんに使い健康を意識したテクニックを駆使して、
味だけでなくオリジナリティーをも産み出したメニューとなりました。
